VVP Edition: Mini Jackfruit and Kimchi BLT Slider Bites

Peppered Maple Jackfruit Bacon

Yeah, I invented a new vegan bacon, especially for the Virtual Vegan Potluck 3.0. It might just be the meatiest and most versatile vegan bacon yet… You’re welcome.

Since I can’t just serve you bacon, (I mean, I could, but this is supposed to be the appetizer course). I’m sharing my take on some special bite sized BLT’s. For size reference, the plate I’m using in these photos only has a 3 inch diameter.

To assemble these little cuties, you’ll need the following: Mini Caraway, Onion and Rye Pretzel Rolls (recipe follows), Kimchi, store bought or homemade, Peppered Maple Jackfruit Bacon (recipe follows), sliced tiny grape and or sun sugar tomatoes, and Vegan Wasabi Ranch Dressing (1/4 c. vegan ranch dressing + 1 t. wasabi paste, stirred til combined)

Vegan BLT Sliders

Peppered Maple Jackfruit Bacon

  • 1 can young green jackfruit in brine (unsweetened) I bought mine from a local Asian Market
  • 1-2 T. liquid smoke (mine is concentrated, so I only used 1 T.)
  • 1 T. Bragg’s liquid aminos or coconut aminos for those with soy allergies
  • 1 T. extra virgin olive oil or melted unrefined coconut oil
  • 2 T. pure maple syrup
  • 1 t. – 1 T. ground black pepper (depending on how peppery you want your bacon)
  • 1 t. balsamic vinegar
  • 1 t. unsulphered molasses
  • 1/2 t. sea salt (optional)

Method: Rinse and drain the jackfruit. Press lightly onto clean kitchen towels to drain any excess moisture. Slice jackfruit into very thin strips with a filet knife, it’s okay if some of it shreds. Jackfruit is kinda shreddy like that. Press sliced jackfruit on the clean kitchen towels again to remove additional moisture. Place jackfruit slices in a medium bowl. In a small bowl, whisk together all the other ingredients to form the marinade. Pour marinade over the sliced jackfruit and gently toss to coat with your hands. Cover and refrigerate for 30 minutes to let the jackfruit absorb the flavors. Preheat your oven to 425°. Lightly oil a large rimmed baking sheet and arrange the jackfruit slices on it so they don’t overlap. Bake for 25-30 minutes, stirring a time or two and watching to make sure the jackfruit bacon doesn’t burn and that it gets nice and crispy (a fine line). Remove from oven and spread onto paper towels and let cool a bit before use.

Mini Caraway, Onion and Rye Pretzel Rolls

  • 1 1/2 C. unbleached organic all-purpose flour
  • 1/2 C. dark rye flour
  • 1/2 t. sea salt
  • 1/2 C. warm water
  • 1 T. olive oil
  • 1 1/2 t. active dry yeast
  • 1 T. caraway seeds
  • 1 T. cocoa powder
  • 1 T. vital wheat gluten
  • 1 T. unsulphered molasses
  • 1 T. dried chopped onion or 1 t. onion powder
  • caraway seeds, sesame seeds and flaked sea salt for sprinkling on the rolls

Method: in a medium bowl, whisk together the dry ingredients (including yeast). Add the wet ingredients and stir with a wooden spoon til combined. If mixture seems to dry, add warm water, a tablespoon at a time. knead dough for 10 minutes. Place in a lightly oiled bowl, cover and Let rise for 30 minutes or until doubled. Punch dough down, divide into 32 mini pretzel roll bites or 16 slider sized rolls. Lightly press each piece of dough down with your fingertips. Arrange rolls on a baking sheet covered with parchment paper or a silpat (otherwise they’ll stick like crazy). Cover and let rise for 20-30 minutes until doubled in size. In the meantime, bring to a boil: 2 quarts (8 cups) water with 1 T. kosher salt and 4 T. baking soda.  When the water comes to a rolling boil, Poach 4 rolls at a time, if doing bite sized, poach for 20-30 seconds, for slider sized 30-40 seconds, turning over halfway through poaching time. See photos of this method hereRemove rolls with a slotted spoon. Slash each roll a couple of times across the top with a sharp knife. Quickly sprinkle with caraway seeds, sesame seeds and flaked sea salt. Repeat until all buns are poached. Let rest while oven preheats to 400 degreesBake for 10-15 minutes for bite sized or 15-20 minutes for slider rolls. Please use parchment paper or a silpat to bake on, otherwise you will need a chisel and a hammer and quite possibly ruin your favorite baking sheet.

Celebrating 100 Posts!

It’s a good day all around, this post marks my 100th post since I started this blog in September 2012. I’m feeling all kinds of love and support! Thanks to all of you. I’m bringing you a throwback recipe today, the one I created for the very first (and epic) Virtual Vegan Potluck. Unfortunately, even though I pre-scheduled my post to go live with everyone else’s, I showed up more than 8 hours late to the party because the time clock on the blog was wrong. Oops.

I’m sure my friend Annie (mastermind behind the VVP) was pulling her hair out over the lateness of mine and several other posts, but somehow she forgave me and invited me to help her run the event that is now cool enough to have appeared at #28 on the PPK top 100 for 2012 list.

For you bloggers who haven’t signed up for the Virtual Vegan Potluck yet, I encourage you to do so. Having over 100 bloggers from all around the world contribute courses from beverages to desserts makes for an incredibly cool event. What if you’re not a VEGAN? Frosty Strawberry Lemonade with Mint

  • 3 C. fresh or frozen strawberries
  • juice and zest from one lemon, I peel the zest in a long thin strip with a vegetable peeler
  • 5-6 mint leaves
  • 1-2 packets truvia (stevia), or other natural sweetener to taste, depending on how sweet your strawberries are
  • 1 C. water (2 C. if using frozen strawberries)
  • 2 C. ice (omit if using frozen strawberries)

Method: Blend til smooth.

Featuring Frugal

Cake Side ViewHave you ever seen a cake that made your knickers get all in a bunch?

This post started out a long time ago, with this cake, however it was a dare last week that made me pull it out of the draft archives. Nick at Frugal Feeding made a fantastic Mushroom Orzotto, and in his post, taunted me thus: “If you are food revellers of vegan ilk, it may prove a little tricky to create a genuinely satisfying orzotto – without the presence of starch or dairy fat thickening without altering the flavour entirely could prove tricky.

Tricky? Um, I simply subbed 1/2 C. cashews blended with 1 C. water and 1 T. nutritional yeast (cashew cream) and used a “knob” of homemade vegan butter instead of the dairy variety. Oh and I used whole wheat Orzo. Pretty sure I wasn’t missing anything flavor-wise. In fact, these are the sort of dishes that makes my husband ask if we’ve gone off the vegan diet. Fantastic recipe Nick! Next time I’ll be doubling it.

The first time I ever saw Hasselback potatoes was on Frugal Feeding. Lets just say, I was more than impressed with the sexy rendition of my favorite root vegetable and have made these several times since.

Then there was the time that I arm wrestled Frugal into participating in the Virtual Vegan Potluck. I don’t think he or his readers ended up disappointed, especially since Nick ended up taking home the prize for best soup with the lovely Roasted Sweet Potato and Parsnip Soup. I knew you had it in you my friend :) Besides, how can you not win everyone over with all those lovely roasted veg? Even the PPK thought the Virtual Vegan Potluck was cool enough to put it at #28 on their top 100 list for 2012! I hope you’ll join us again in May.

Now back to that cake. As I said before, this is exactly the type of cake that makes me swoon.

Cake Side & Top ViewFrugal’s Apple and Walnut Cake with Black Treacle (Molasses) Icing

I made a double layer 9 inch cake instead of using the 20cm cake tins. I didn’t have any batter leftover for cupcakes like Nick did in his recipe.

Demystifying Metric Measures & Vegan Substitutions: If you don’t have a kitchen scale, I’ve weighed the ingredients on my kitchen scale and then measured them to take the guesswork out of it for you. Normally I wouldn’t include a blogger’s full recipe, but the online measure substitution tools weren’t entirely accurate and caused me to make a mess out of my first cake. I don’t want the same to happen to you. (Don’t worry, I asked Nick for permission). Go to his recipe for the method, but do preheat your oven to 150° celcius (302° farenheit) before starting and give your 9 inch tins an extra five minutes in the oven.

Apple and Walnut Cake with Black Treacle (Molasses) Icing

Ingredients for the Cake:

  • 300 grams organic all purpose flour = 2 cups + scant 1/2 cup (I used whole wheat pastry flour)
  • 1 t. ground cinnamon
  • 1/2 t. baking soda
  • 140 grams dark brown sugar = scant 2/3 cup
  • 50 grams golden caster sugar (I used organic unrefined sugar) = scant 1/4 cup
  • 250 ml sunflower oil = 1 cup + 3 tablespoons (I used half the amount and subbed 1/2 C. applesauce for the rest, because, as my daughter said when I was measuring it out “mom, you don’t use that much oil in a whole year’s worth of cooking”)
  • To substitute for the 4 eggs in the recipe: use 1 cup silken tofu, 2 t. apple cider vinegar and 1 t. baking powder blended all together in a blender, (vinegar and baking powder mimics the rise that eggs give in baking)
  • 3 grated apples (leave skins on)
  • 100 grams chopped walnuts = 1 cup
  • 2 t. Mexican vanilla (addition) because I simply have to put it in everything I bake at the moment

Ingredients for the Icing:

  • 100 grams homemade vegan butter or earth balance = about 1/2 cup
  • 50 grams dark brown soft sugar = about 1/4 cup
  • 1 Tablespoon black treacle (molasses)
  • 1 t. Mexican vanilla
  • 200 grams vegan cream cheese = about one 8 ounce container of vegan cream cheese OR or 2/3 block extra firm tofu, pressed overnight to remove extra liquid. If you are using the pressed tofu (like I did) instead of store bought vegan cream cheese, add 1/4 teaspoon sea salt and 2 Tablespoons lemon juice to the recipe.

Combine all in food processor until silky smooth. To the tofu haters: if you make the icing in advance and let it sit for a few hours in the fridge before icing the cake, the tofu flavor in the icing becomes completely indistinguishable as it absorbs the flavors of the other ingredients. I swear it tastes just like I used real cream cheese.

Double Dark Chocolate Coconut Pecan Cookies

So I made an incredibly delicious batch of cookies a couple weeks ago, but I didn’t even attempt to photograph them for the blog because quite frankly, I thought that they looked like poo. Sometimes when I have a great recipe like this that doesn’t end up here, I’ll email it to my best friends because I want them to have it to enjoy, even if I can’t make it look pretty.

Would you believe Annie at An Unrefined Vegan baked some right up AND then photographed them for me? Now that’s what you call true blogging buddy love. Somehow she managed to make the cookies look a lot prettier and a lot less like poo than my batch. Perhaps that had something to do with the fact that she didn’t have a scrap of coconut in the house to add to them.

Double Dark Chocolate Coconut Pecan Cookies

  • 1 C. whole wheat pastry flour
  • 1/4 C. cocoa powder
  • 1/4 C. chopped pecans
  • 1/4 C. shaved dried coconut (not the itty bitty kind, and toasting the coconut makes it even more delicious)
  • 1/3 C. dark chocolate chips
  • 1/2 t. baking soda
  • 1/3 C. agave
  • 1/4 t. sea salt
  • 2 T. coconut oil
  • 2 T. almond butter
  • 1/4 C. non-dairy milk of choice
  • 2 t. vanilla

Method: Preheat oven to 350 degrees. Mix flour, cocoa powder, salt and baking soda together. Cut in almond butter and coconut oil (solid) until crumbly. Add soy milk, vanilla, agave, coconut, chocolate chips and chopped pecans. Stir  with a wooden spoon until combined. Form 12 big cookies, place on a baking sheet and bake for 10-12 minutes. Let cool on a wire rack for a few minutes before eating.

Virtual Vegan Potluck – Spooky Vegan Macadamia Nut Brie en Croute

Welcome to the Virtual Vegan Potluck and my final Vegan MOFO post!

What a special night! It’s still Halloween on this side of the hemisphere and Vegan Zombies are everywhere on the loose counting down to World Vegan Day. Watch out, they’re coming to eat your brains grains. To save my pantry from a full on zombie invasion, I baked you them up this special ooey-gooey-spooky treat!

Macadamia Nut Brie en Croute

You will need to make these three recipes for this appetizer. You will also need a sheet of vegan puff pastry (if you are really awesome, make your own).

Macadamia Nut Brie

Inspired by a Vegan Brie in The Complete Guide to Vegan Food Substitutions

  • 1 C. macadamia nuts, soaked 4-8 hours in cold water, then drained and rinsed. Last tine I made this I used 1/2  Macadamias and  1/2 cashews and I liked it even better
  • 1 C. boiling water
  • 2 T. Tapioca Flour (optional, makes for a firmer brie)
  • 1 T. pure maple syrup
  • 1 T. yellow miso
  • 2 T. tahini
  • 1 T. rice vinegar
  • 1 t. dijon mustard
  • 1 t. sea salt
  • 2 T. Earth Balance or other vegan buttery spread
  • 1/2 package Pamona’s Pectin (only this brand of pectin will work in this recipe)

Method: Lightly oil a small round dish (I used a glass tupperware), set aside. Measure out half of the dry pectin, about 4.5 teaspoons. Combine calcium packet from pectin box with 1/2 C. water (not listed in ingredients above) in a small lidded jar and shake til thoroughly combined. Blend all ingredients except pectin and calcium water in your turbo blender or food processor until completely smooth. Add dry pectin and half (1/4 C.) of the calcium water and pulse until all combined and thick. Immediately scrape hot brie out into the small round prepared dish. Refrigerate for a couple hours, turn out on to a plate, brie will be slightly soft (as brie is) but ready to use in this recipe.

Maple Cranberry Sauce

  • 1 package fresh cranberries (I used ocean spray)
  • 2/3 C. pure maple syrup
  • 2/3 C. apple cider
  • 1/4 t. crushed thyme
  • 1/4 t. sea salt

Method: Combine all ingredients in a saucepan. Bring to a boil, stirring occasionally. Reduce heat and simmer for 10-15 minutes. Remove from heat, pour into glass jar. Let cool and refrigerate until ready for use (this will keep up to a month in the fridge and longer in the freezer and leftovers can easily be saved for the holidays).

Savory Oven Crackers

inspired by this favorite cracker recipe

  • 1 C. whole wheat flour
  • 1/4 C. sesame seeds (I used black)
  • 2 T. extra virgin olive oil
  • 6-8 T. cold water
  • 1 t. smoked paprika
  • 1 t. veggie salt or sea salt

Method: Preheat oven to 400 degrees. Process all ingredients but water til combined in your food processor. Add half the water, then add a water a tablespoon at a time (you may not need it all) while pulsing until a round ball of dough forms. Put dough on a sheet of parchment paper and roll out until PAPER thin (or as thin as you can possibly roll them out). Brush surface with water and sprinkle with a bit more sea salt or veggie salt. Cut into squares with a pizza wheel. Bake for on a baking tray for 8-10 minutes, then remove crackers from parchment paper and bake an additional few minutes  on the tray until golden.

Assemble the Brie en Croute: Preheat oven to 400 degrees. Roll out puff pastry a bit. (I reused the parchment paper I cooked the crackers on for this task) Spoon 1/2 C. Maple Cranberry Sauce into the center.

Top with Macadamia Nut Brie (smooth side touching the cranberry sauce). Leaving a few inches all around, cut puff pastry into a round following the brie as a guide. Tuck edges up in a pinwheel fashion.

Turn right side up and decorate spookily  (or festively for upcoming Holidays) with remaining scraps if desired. My attempt at a spiderweb is a little lame, but whateves. I brushed my pastry with 1 T. water and 1 T. pure maple syrup to make it extra glossy.

Bake for 20 minutes until pastry is golden. I broiled mine for 3 minutes to get the pastry to a deeper golden color and it ended up being 2 minutes too long.

Feed to Fellow Potluckers Vegan Zombies on a tray with the savory oven crackers and a side of extra cranberry sauce.
