Now for that super refreshing smoothie!

Apple Pie Smoothie2 LR

Apple Pie Green Smoothie

This smoothie is surprisingly reminiscent of apple pie. It is really delicious and I think you’ll find it one of your fast favorites. The fiber from the apples also keeps your stomach full for a long time, so this is a favorite smoothie of mine to take out and about when I’m running errands all morning and need something to tide me over until I get home.

(Recipe from The Abundance Diet, © 2015 by Somer McCowan. Used by permission from Vegan Heritage Press LLC.)

  • 1 cup water
  • 2 cups packed organic baby spinach
  • 1 medium banana
  • 2 small apples, cored and quartered
  • 1 tablespoon organic apple butter or 1 date, pitted and snipped into small pieces
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups ice cubes
  • 1 tablespoon ground flaxseed, chia seed, or hemp seed (optional)
  • Liquid stevia, to taste (optional)

In a blender, combine the water, spinach, banana, apples, apple butter, cinnamon, ice, and flaxseed, if using. Blend the mixture until completely smooth, creamy, and well combined, about 1 to 2 minutes. Add the liquid stevia, if using, and pulse to incorporate.

Makes 1 serving (about 1 quart)

  1. Congrats on the release, just purchased the ebook version because it will need 3-5 weeks to arrive here in Germany (according to Amazon) 😊 I’m so curious and after seeing your Apple pie smoothie I just couldn’t wait! 🎶

  2. i am so glad your book is finally out and very excited for you! I can’t wait to check out all the yummy recipes!

  3. Congratulations! It looks wonderful! Really enjoy your posts, so I’m sure your book will be spectacular… and you have a very talented photographer working with you, a perfect combination.

  4. Congratulations, Somer! This is huge!!!!! This seems like the kind of book that I would love to give to my vegetarian and pescetarian family members who struggle with their favorite comfort foods not being vegan.

  5. Somer, you are so talented and make cooking and baking look so fun and rewarding. I tell my friends that if I had your talent and drive to cook I would be vegan exclusively, as your food looks devine! Congrats on the beautiful book!

  6. Everything I’ve read so far about your new book sounds wonderful! Love to win a copy. Thanks.

  7. Congratulations! I’m excited to receive my copy that I pre-ordered through Barnes & Noble. When I saw that your recipes were also gluten-free that was a big plus for me. Was confirmed today that I indeed have “Celiac Disease” ….not just sensitivities. Would love to win a anothrer copy to give to my Granddaughter who’s in High School and starting a WFPB diet 🙂

  8. I have needed to get inside your head for so long. You always look amazing, look like you feel amazing and are such an amazing example of how to take care of your health – I need this in my life so badly. I want to look and feel amazing! Thank you for being so successful so I can one day be successful, too. You’re my inspiration!

  9. thank you for your dedication in creating and sharing delicious healthy recipes! I’ve been a fan since the beginning 🙂

  10. Just discovered your blog and am loving everything I see! Great looking cookbook and I am looking forward to adding to my collection. 🙂

  11. Somer, I was so excited to get the book yesterday after pre-ordering on Amazon and I jumped right in this morning with the Green Zinger smoothie! I have what might be a silly question: If I am going to use the Abundance Diet as a lifestyle, how do I incorporate WFPB entrée and snack recipes that are not in the book? There are so many great recipes on your blog, and I am loving Richa Hingle’s and Kittee Berns’s cookbooks these days (Can you tell I’m obsessed with ethnic food?). After I get past the first 28 days, how do I ensure I’m still making good choices according to the Abundance Diet?

    THANK YOU!!!

  12. Must. Have. This. Book!! One of the recipe testers posted pictures and there were some tempting dishes.

  13. The pictures make my mouth water – yum!!! Can’t wait to try that Red Lentil Soup – the spices look perfect. Thanks for sharing the recipe!

  14. Congrats on your new cookbook, this is spectacular. Wishing you all the best. I would like a copy because I’m always on the hunt for a new vegan cookbook. Your site is fabulous too by the way. I’m interested in the Moroccan Lentil soup recipe for starters!

  15. I’m so happy you’ve created this fabulous book to share with all of us! Due to a medical issue I’ve been battling for over 3 years, I haven’t been able to do much cooking (I used to cook twice a day!). Having a cook book that offers simple, uncomplicated and nutritious recipes would be much appreciated and would boost my natural healing abilities. I look forward to putting this episode behind me – your thoughtful, creative, and tasty recipes will help me accomplish my goal.

  16. The cookbook and plan look amazing! I retired recently and would live to have this book to jumpstart my new life!
