  1. Congrats on the book! Well done.

I wish someone would create a cook book for us vegan corporate gals. I work full time (averaging 47 hours no including my commute) in a corporate office in Boston. Every Sunday I cook my meals (lunch & dinner) for the entire week and schlep the lunches into work via the commuter rail. I like to make foods that will last the week without drying up, which is why I tend to make a lot of (vegan) soups and stews; however, I’d love to make something other than soups and stews. (Here again, keeping in mind that the foods need to hold up for the week without the texture changing.)

    Does this make sense?

Anyway. I am kind of sick of soups/stews but unfortunately, I find myself making the same 5 recipes because I have absolutely no other time except Sundays so I tend to ‘stick with what I know’.

If you have any suggestions, please feel free to email me off line. I have commented using my real name and email address; however, if you comment on this comment I won’t see it because I’m not logged into WP which means I will have to check back. I know your time is busy so if you don’t have the time, I fully understand.

    Kind regards,
    Susan

  2. I am so excited for this giveaway! I’ve been visiting your site often for recipes, but just recently read your story. Wow and congrats! Cookbooks like yours will open up more eyes and allow people to realize what a wonderful, delicious, gratifying and healthy life they can live without meat and without sacrificing taste. Thanks so much!

    1. L’Asha, the only error I’m aware of is that the menu plan was omitted from the book in a printing error. It’s available for download on the toolbar of my site as well as on this post.

  3. Hi Somer, now that I’m on the diet for 5 days, I got two questions for you:
    1) Are there specific times on which you recommend eating salad/soup/snack/main? Do I have to follow that order or can I have main for lunch since its more convenient to pack for work?
    2) Are there any guidelines how I can cook esp. the soups or some mains in the Instant Pot? Followed your recommendation and bought one… 😉
    Thanks for your awesome work!

PS: I also asked you per mail whether its possible to share a recipe with my blog readers and there is no reply so far… :/

    1. Hi Anna, the meals can be eaten in any order you prefer.

For soups in the instant pot, I use the sauté function to cook aromatics like onions and garlic and then put the lid on the pot and cook the rest. Some soups like the tomato soup will only need one minute. Soups like the Moroccan lentil that uses dried split lentils takes 10, the hearty lentil soup 12. All others probably 4-6 minutes.

I’ll check my email. I’m sorry I’ve missed your question. I’ve been away on vacation lots this summer and haven’t been keeping up.

      Best,

      Somer

  4. I want to make the Curried Brown Rice salad, but can’t find the recommended brand of red curry powder anywhere. McCormick has a red curry powder that is coriander, cumin, chili pepper, red pepper, and cardamom. On Amazon, D’alessandro has a red curry powder that includes lemongrass, galangal, red Thai chiles, cilantro and garlic. Obviously, these two red curry powders will taste totally different in the dressing.

Is it possible to use red curry paste?

  5. None of the links to your posts are working! I did the green smoothie challenge a while ago and loved it, but I cant find the link to it anymore, and I really loved the Abes Hearty Lentil Soup, but I cant get to that either!!
