Pepita Oatmeal Raisin Cookie Bars

I met Susmitha through a Vegan Facebook Group, the Vegan Temptivists. There’s some crazy good food going down in that group and it’s really fun to see what everyone comes up with and “brings to the facebook table” from all around the world. The best part of belonging to that group though, has been getting to know Susmitha, she lives in India, she’s a sweet little firecracker with a fun and vivacious personality. I’m sure if we ever get to meet in real life, there would be no awkwardness, we’d simply hit it off, like we’ve always been friends.

    1. What I love about this recipe is that there’s no fussy special vegan ingredients. Anyone can make them 🙂 Hope you enjoy them as much as we did.

            1. Oh it’s been happening, just not all day. And I’m reading fluff. None of that hard to comprehend business or serious food stuff. It’s like filler 🙂

        1. dude seriously… i will need a load of sunscreen after 10 years of 300 days per year of no sun when i visit. :)) gosh i miss our home with the mango and custard apple trees:)

            1. i think we had a guava tree, curry leaves tree and a bunch of smaller veggie/fruit garden too. all in a small backyard. i dont know how many of them are still there.

              1. Holy dooley! I would love to have all those trees/fruit/veg in my backyard. I’m hopeless at growing anything and the snow would be sure to kill whatever I didn’t 😉

        2. Wouldn’t that be divine, now only if someone would take over my full time mom duties and front me the airfare 😉 I’d be there in a heartbeat!

  2. i am going to make these with dark chocolate and cranberries.. i think hubbs has had enough super healthy cookies lately and he associates raisins with them. he looks at me like.. can we have some high fat high sugar stuff:) and then when i make some he takes it to office and everyone eats them but him.. that is why i send the low fat low sugar stuff with him to office too 😉

    1. Richa! Dark chocolate and cranberries sounds divine. I think we all get tired of the super healthy cookies and need a splurge once in a while. I usually try to bake with pure maple syrup or agave, but organic sugar isn’t very refined and sugar is sugar is sugar, right? 😉 However, these cookies are still lower sugar and oil than most, so they’re not too bad.
