Yeah, that’s a heckuvalotta coconut oil for this 5th day of Christmas Giveaway! Think of all the cookies, cheese balls and grasshopper brownies you could make! Or, you could bathe in it, use it as a moisturizer, remove your makeup with it or whatever you want! In the meantime, here’s the recipe for the cookies!

Radical Chocolate Chip, Coconut and Almond Cookies

  • 1 cup whole wheat pastry flour or gluten free flour
  • 1/2 cup raw or organic sugar
  • 2 tablespoons ground golden flax seed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/3 cup melted virgin coconut oil
  • 1/4 cup plain soymilk
  • 1 teaspoon unsulphered molasses
  • 1 teaspoon almond extract
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup sliced almonds
  • 1 cup vegan chocolate chips

Method: Preheat oven to 350°. In a large bowl, combine the dry ingredients: flour, sugar, ground flax seed, baking powder, baking soda and salt with a wire whisk. Add the wet ingredients: the melted coconut oil, soymilk, unsulphered molasses and the almond extract. Stir together until combined. Then add the shredded coconut, sliced almonds and the chocolate chips. Stir until well mixed. Drop by heaped tablespoons onto a large baking sheet. Bake for 10-12 minutes or until cookies are golden. Let cool on a wire rack before eating (this will also help the cookies to set and not crumble).

  1. I use coconut oil for cooking and baking. On the rare occasion I wear mascara, I use coconut oil to remove the mascara.

  2. I love coconut oil for so many things- baking, moisturizing, sometimes just eating a bit extra that comes out of the jar with what’s needed for a recipe. If I won this giveaway I’d definitely be using it more, and I’d love to try making my own hygeine products with it!

  4. Oh, this would be such a handy and helpful win! I use coconut oil daily. I use it in the morning for oil pulling and I use it daily in our green smoothies. I have an illness that effects my brain and since I have used coconut oil in my smoothies my brain function is better…less symptoms!

  5. I am probably the only plant-based person who has not used coconut oil yet in cooking or as a moisturizer. So, as a newbie, I have a question: Do you guys feel it rubs in well and isn’t greasy when used as a moisturizer? Somer, here is another question I have been wanting to ask you . . . health-wise, is it terrible to use regular semi-sweet chocolate chips instead of vegan ones? I haven’t made the switch yet. Hope your holidays are awesome!!

    1. Laurie, many brands of semi-sweet chocolate chips are accidentally vegan. Just check the label 🙂 ghirardelli is one I can find at most grocery stores, but they may two varieties, so just make sure to get the one without milk or butter in the label. Smith’s grocery also has a “whole foods sort of line” forgot what it’s called. Their semi-sweet chocolate chips are also vegan, as is the Kirkland signature brand 🙂

      Coconut oil may feel greasy for a bit when it’s first rubbed in, but then it absorbs and it’s lovely 🙂

  7. i prefer to use coconut oil over any other oil. i use it for cooking, baking, eating with a spoon or with my finger, applying to dry skin, and more 🙂

  8. I have recently completed a 45 day chemotherapy treatment on my face for pre-cancer spots. It was incredibly painful & I ended up with 30% of my face covered with sores…followed by scabs! I use coconut oil for most everything, however, it was a real life saver during my treatment. I used it to soothe my face during the day. Now that my face is healing I apply coco oil several times a day and I’m convinced that;s why my face is healing so quickly!!! 🙂

  9. I use coconut oil for my hair and cooking. It’s great stuff. I’ve always wanted to try the Gold Label by Tropical Traditions. I’ve had their coconut butter and it’s delicious.

  11. I use coconut oil daily not just for my human family but also for our 4 K-9 kids I put a Tablespoon of it on top of their food not only does it make their skin and coats healthy and shiny but they love it they will do any trick I ask of them to get their coconut oil!
