Summer Berry Cheesecake Recipe from Nut Butter Universe, plus Review and Giveaway!

So, Dianne Wenz, from Vegan Heritage Press (aka Veggie Girl and fellow Vegan Temptivist) emailed me and asked me if I’d review Robin Robertson’s Nut Butter Universe. Of course I said YES! I mean, every single recipe in this book features nuts, seeds, or nut butters (or all 3). Robin gives simple instructions on how to make your own nut and seed butters at home. No more paying $10 a jar for Tahini! Plus, I was super excited after seeing Kristy’s review and the Fantasy Brownies (woah…) Basically, I all ready knew this cookbook would be right up my alley.

I’ve tested more than 10 recipes out of the book and each one turned out every bit as delicious as the last. This is definitely MY KIND of cookbook!

Here’s several of the things I made out of Nut Butter Universe:

Nutty Buddypg. 90, one of the top vegan burgers I’ve ever tried, though I may use a flax egg to get it to bind better next round (and there will be a next round).

Too Easypg. 132 OMGosh, this fudge literally comes together in minutes and is ridiculously delicious.

Doggie Treatspg. 133, yup, something for your LUCKY four legged friend too, my friendly tester definitely approved!

Thank goodness Vegan Heritage Press had my back on this one and had a photo for me to share with you.

Almond Romescopg. 52, I have a feeling this will be our “go-to” grilling recipe this summer. SO in love with the Almond Romesco Sauce.

Pineapple CoconutThis is honestly the most realistic vegan cheesecake that I’ve ever eaten.  Look at the cheesecake in relation to the size of the fork in front of it! I quartered the recipe and made it baby sized for portion control (4 inch springform!)

I’ve also made (but not photographed) the following:

Orange Decadence Chocolate-Almond Truffles pg. 126 (like a Christmas Present melting in your mouth). Cold Noodle Salad with Spicy Peanut Sauce pg, 42, I’ve made a lot of Peanut Noodle salads, but this one had the perfect balance of flavors and textures. I used rice noodles and made it gluten-free, most if not all recipes in the book can be made gluten-free! Peanut Butter Cups pg. 127 Even better than the real thing…and last but not least, the Crunchy Coleslaw with Creamy Cashew Dressing pg. 46. Yes, it’s simple and amazing.

Summer Berry Cheesecake

Summer Berry Cheesecake

This light and luscious cheesecake features your favorite berries of summer. The creamy goodness comes from cashews blended into a rich butter and combined with vegan cream cheese. Be sure your berries are well-drained and blotted dry to remove any liquid.

Ingredients:

  • 3/4 cup almonds, soaked overnight, then drained and blotted dry
  • 3/4 cup soft pitted dates
  • 1 cup raw cashews, soaked overnight, then drained and blotted dry
  • 1/2 cup natural sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2  (8-ounce) containers vegan 
cream cheese, at room temperature
  • 1 1/2 cups fresh or thawed frozen 
strawberries, blackberries, or raspberries, well drained and blotted dry
  • 2 tablespoons cornstarch
  • Fresh berries and mint leaves, for garnish

Preparation: 

  • Grease an 8-inch springform pan and set aside. In a food processor, combine the drained soaked almonds and the dates and process until finely ground. Press the mixture into the bottom of the prepared pan. Set aside. Preheat the oven to 350°F.
  1. In a food processor or high-speed blender, combine the soaked and drained cashews, sugar, lemon juice, and vanilla, and process to a paste. Add the cream cheese, berries, and cornstarch, and blend until smooth and very creamy.
  2. Pour the filling into the prepared crust and bake for 45 minutes. Turn off the oven and leave the cheesecake inside for another 10 minutes.
  3. Remove the cake from the oven and cool at room temperature, then refrigerate at least 4 hours before serving. Carefully remove the sides of the springform pan before slicing. (You may need to run a knife around the edge of the cake to separate it from the pan.) Serve garnished with fresh berries and mint. Cover and refrigerate any leftovers.

Ben and Jerry’s Ice Cream had a stroke of Genius when they invented their Cherry Garcia flavor, named after the famed Jerry Garcia (1942-1995) of the Grateful Dead. It’s still their best selling flavor, because it’s freaking delicious. What’s not to love about cherry flavored ice cream with whole cherries and dark chocolate pieces? Too bad they haven’t created a vegan line of their ice cream…

Who else has been to a Grateful Dead Concert?

 I went to one show in Las Vegas in 1995 just before Jerry kicked the bucket. I thought I’d died and gone to hell. 30,000 people with nudity, drugs and chaos everywhere. Though I love the Dead, I’m pretty sure Dave Matthews opening for them was the best part of the show before everyone and their dog was higher than a kite. Funnily enough, we went as a family, as in my some of my siblings and my parents went to the concert too. We went to celebrate and mourn the life of my brother, Ben, who had passed earlier in the year. The Grateful Dead was one of his favorite bands. During the show another sibling who shall not be named here, went missing at some point during the show. We later found him passed out in the parking lot. Someone had stolen the Teva’s off his feet.

Vegan Cherry Garcia Ice Cream

For the Ice Cream Base:

  • 1 can full fat coconut milk
  • 1 can lite coconut milk
  • 3/4 C. raw sugar
  • 1 t. vanilla OR cherry extract if you can find it
  • 1 C. fresh or frozen pitted cherries
  • 1 T. fresh lemon juice

For the Dark Chocolate Pieces: 

  • 1/2 C. chopped vegan dark chocolate or vegan dark chocolate chips
  • 2 T. coconut oil

Method: Make the dark chocolate pieces first: Melt the chopped dark chocolate and the coconut oil together over a double broiler on low-ish heat. Once fully melted, pour the chocolate mixture into an 8×8 pan lined with parchment paper or plastic wrap. Stick in the freezer and let chill til solid.

While the chocolate mixture is chilling, blend coconut milks, sugar, lemon juice, vanilla and just a few of the cherries (for color) until completely smooth. Pour into prepared ice cream maker and let churn for 25-30 minutes. If you don’t have an ice cream maker, you can try this method. While the ice cream is churning, cut the chilled chocolate into pieces with a pizza wheel. Return chocolate pieces to the freezer.

When the ice cream finishes churning, pour ice cream into a large freezer safe container and stir in the chocolate pieces and the remaining cherries, so they stay mostly intact. You can eat it now, like soft serve but it’s much better when you freeze it for 2 hours til it’s nice and solid.

When family is around, I love entertaining, our gatherings have always centered around good food and lots of it. So when my younger brother, Morgan, came for Sunday dinner over the weekend after not seeing him for nearly a year, I pulled out all the stops.

We had some fantastic pizza, a shaved brussels sprouts and kale salad with poppyseed dressing,then we had this dessert.

So rich and scrumptious, that this is only for serious chocolate lovers. Very thin slices of this dessert will satisfy, it has a crazily fudge like texture and could easily serve 12-14 people.

Death by Double Dark Chocolate Killer Fudge Pie

  • 15 Chocolate Sandwich Cookies (I used Newman O’s), GF peeps can use GF Sandwich Cookies
  • 2 T. Coconut Oil
  • 1 package extra firm silken tofu
  • 2/3 C. agave
  • 1/4 t. sea salt
  • 1 T. vanilla
  • 1 t. instant coffee granules (I used a coffee substitute)
  • 1/2 C. cocoa powder
  • 1 cup full fat coconut milk (from a can)
  • 1 C. vegan dark chocolate chips, melted

Method: In a food processor, pulse the chocolate sandwich cookies til finely crumbled, add the coconut oil and pulse again until combined. Press into a spring-form pan or pie dish. Add the tofu, agave, sea salt, vanilla, coffee granules, cocoa powder and coconut milk to the food processor. Process until completely combined and smooth. Melt your chocolate chips if you haven’t all ready. Scrape them into the tofu mixture. Pulse again until chocolate is completely incorporated. Freeze for 30 minutes before serving to firm. Leftovers can be stored in the refrigerator and will stay nicely set.

On St. Patrick’s Day, our family always has a lot of fun. The naughty leprechaun comes to visit, sometimes he leaves us treats and gold coins, other times he just makes messes all around the house. Someone is always being pinched. We usually eat entirely green in our family for the whole day.

Breakfast might be whole-grain-pioneer-blender-pancakes colored green by adding spinach to the batter with honeydew and green grapes on the side. For lunch a green salad with a green goddess avocado and chive dressing is always in order. For an afternoon snack, I bust out the greenest smoothie you’ve ever seen. Dinner is a whole green affair: an appetizer of celery, cucumber, broccoli and green olives in edamame and avocado hummus. Main course might consist of spinach fettucine with green cashew alfredo (spinach is the star again!) topped with basil chiffonade. This year, we’ll definitely be having THIS very green ice cream for dessert.

Vegan Almond and Pistachio Ice Cream

  • 1 can full fat coconut milk 
  • 1 C. soymilk
  • 1/4 C. raw almond butter
  • 2 C. packed organic baby spinach
  • 2/3 C. raw agave OR pure maple syrup
  • 1/3 C. shelled pistachios, roughly chopped
  • 1 teaspoon almond extract

Method: In your blender, blend everything except for the pistachios until fully combined, about one to two minutes. There should be no visible spinach pieces! Pour into prepared ice cream maker and let churn for twenty five to thirty minutes, add pistachios during the last few minutes of churning. You can eat it straight away like soft serve, but for the best texture and flavor, pour ice cream into an airtight container and freeze for two hours or overnight before serving. If you don’t have an ice cream maker, you can try this method.

Hesitant to try green ice cream using spinach? Prior to going vegan, Pistachio Almond Ice Cream was one of my very favorites. This is a reverse of that flavor, made vegan and health-ified. I don’t use artificial coloring in my home, so spinach makes the ice cream green, while adding iron and calcium. If you don’t tell anyone, they’d never guess it’s in there! This ice cream tastes every bit as rich, creamy and delicious as dairy ice cream, but with much less guilt!

This post started out a long time ago, with this cake, however it was a dare last week that made me pull it out of the draft archives. Nick at Frugal Feeding made a fantastic Mushroom Orzotto, and in his post, taunted me thus: “If you are food revellers of vegan ilk, it may prove a little tricky to create a genuinely satisfying orzotto – without the presence of starch or dairy fat thickening without altering the flavour entirely could prove tricky.

Tricky? Um, I simply subbed 1/2 C. cashews blended with 1 C. water and 1 T. nutritional yeast (cashew cream) and used a “knob” of homemade vegan butter instead of the dairy variety. Oh and I used whole wheat Orzo. Pretty sure I wasn’t missing anything flavor-wise. In fact, these are the sort of dishes that makes my husband ask if we’ve gone off the vegan diet. Fantastic recipe Nick! Next time I’ll be doubling it.

The first time I ever saw Hasselback potatoes was on Frugal Feeding. Lets just say, I was more than impressed with the sexy rendition of my favorite root vegetable and have made these several times since.

Then there was the time that I arm wrestled Frugal into participating in the Virtual Vegan Potluck. I don’t think he or his readers ended up disappointed, especially since Nick ended up taking home the prize for best soup with the lovely Roasted Sweet Potato and Parsnip Soup. I knew you had it in you my friend 🙂 Besides, how can you not win everyone over with all those lovely roasted veg? Even the PPK thought the Virtual Vegan Potluck was cool enough to put it at #28 on their top 100 list for 2012! I hope you’ll join us again in May.

Now back to that cake. As I said before, this is exactly the type of cake that makes me swoon.

Cake Side & Top ViewFrugal’s Apple and Walnut Cake with Black Treacle (Molasses) Icing

I made a double layer 9 inch cake instead of using the 20cm cake tins. I didn’t have any batter leftover for cupcakes like Nick did in his recipe.

Demystifying Metric Measures & Vegan Substitutions: If you don’t have a kitchen scale, I’ve weighed the ingredients on my kitchen scale and then measured them to take the guesswork out of it for you. Normally I wouldn’t include a blogger’s full recipe, but the online measure substitution tools weren’t entirely accurate and caused me to make a mess out of my first cake. I don’t want the same to happen to you. (Don’t worry, I asked Nick for permission). Go to his recipe for the method, but do preheat your oven to 150° celcius (302° farenheit) before starting and give your 9 inch tins an extra five minutes in the oven.

Apple and Walnut Cake with Black Treacle (Molasses) Icing

Ingredients for the Cake:

  • 300 grams organic all purpose flour = 2 cups + scant 1/2 cup (I used whole wheat pastry flour)
  • 1 t. ground cinnamon
  • 1/2 t. baking soda
  • 140 grams dark brown sugar = scant 2/3 cup
  • 50 grams golden caster sugar (I used organic unrefined sugar) = scant 1/4 cup
  • 250 ml sunflower oil = 1 cup + 3 tablespoons (I used half the amount and subbed 1/2 C. applesauce for the rest, because, as my daughter said when I was measuring it out “mom, you don’t use that much oil in a whole year’s worth of cooking”)
  • To substitute for the 4 eggs in the recipe: use 1 cup silken tofu, 2 t. apple cider vinegar and 1 t. baking powder blended all together in a blender, (vinegar and baking powder mimics the rise that eggs give in baking)
  • 3 grated apples (leave skins on)
  • 100 grams chopped walnuts = 1 cup
  • 2 t. Mexican vanilla (addition) because I simply have to put it in everything I bake at the moment

Ingredients for the Icing:

  • 100 grams homemade vegan butter or earth balance = about 1/2 cup
  • 50 grams dark brown soft sugar = about 1/4 cup
  • 1 Tablespoon black treacle (molasses)
  • 1 t. Mexican vanilla
  • 200 grams vegan cream cheese = about one 8 ounce container of vegan cream cheese OR or 2/3 block extra firm tofu, pressed overnight to remove extra liquid. If you are using the pressed tofu (like I did) instead of store bought vegan cream cheese, add 1/4 teaspoon sea salt and 2 Tablespoons lemon juice to the recipe.

Combine all in food processor until silky smooth. To the tofu haters: if you make the icing in advance and let it sit for a few hours in the fridge before icing the cake, the tofu flavor in the icing becomes completely indistinguishable as it absorbs the flavors of the other ingredients. I swear it tastes just like I used real cream cheese.

Blogging and Friendship

Blogging is a funny thing. At first you start posting your recipes, hoping to garner some sort of recognition, then you start reading other people’s blogs, then joyfully and inevitably some lovely friendships form. Sometimes, you get lucky enough to actually meet and get to know these friends. Pure love. So, I’m apologizing now to all my blogging friends whom I haven’t been by your sites to read or comment on your posts lately. In the last month I’ve sustained two different injuries that have left me mostly couch bound, reading the classics, and drinking lots of tea and trying not to feel sorry for my sad self. My cooking skills have gone down the proverbial toilet (as evidenced by THREE batches of failed cupcakes for a Valentines party yesterday). You may have noticed I haven’t been around, I’m not feeling inspired and I’m sorry to say that the last thing I’m interested in right now is reading about food. I’m sure when I recover I’ll be back with a vengeance, but in the meantime I hope you’ll forgive my absence. It’s not you, it’s me.

It hasn’t helped my mojo that one of my best blogging buddies jumped ship and moved back to her home in Oklahoma after being here in Utah for the better part of 2012. I’m feeling forlorn and I miss her like I miss my right arm. I thought you might enjoy a post about her food since I’m not creating anything wonderful. At least you can get some inspiration from Annie at An Unrefined Vegan.

Flavors to try: coconut, chopped crystalized ginger, roasted almond and raisin, orange (using a couple drops essential oil), mayan (cinnamon and chili), peppermint (using a couple drops essential oil), pecan, and of course peanut butter cup.

Miso SoupAnnie’s Miso Ginger Soup with mushrooms added in. Nearly as comforting as a hug from the girl herself.

I’ll miss our lunch dates my friend.

I met Susmitha through a Vegan Facebook Group, the Vegan Temptivists. There’s some crazy good food going down in that group and it’s really fun to see what everyone comes up with and “brings to the facebook table” from all around the world. The best part of belonging to that group though, has been getting to know Susmitha, she lives in India, she’s a sweet little firecracker with a fun and vivacious personality. I’m sure if we ever get to meet in real life, there would be no awkwardness, we’d simply hit it off, like we’ve always been friends.

Chocolate Ginger Ice Cream

Close upIn the middle of winter when the sun is shining AND the mercury rises above freezing in Utah, people start wearing shorts, sandals (often with socks) and t-shirts. I don’t belong to that club, but I did I celebrate by going snowboarding, I actually had to take off my jacket on the slopes….. then I made some ice cream.

Chocolate Ginger Ice Cream

  • 1 can full fat coconut milk
  • 1 1/2 C. plain soymilk or 1 can lite coconut milk
  • 1/2 C. agave
  • 1 t. Mexican vanilla
  • 1/2 C. cocoa  powder
  • 1/4-1/2 C. crystallized ginger, roughly chopped

Method: blend ingredients til just combined. Pour into prepared ice cream maker. Churn for 30 minutes. You can eat it now (like soft serve) or transfer it to a container and freeze for 2 hours for ice cream that is nice and firm (like in the photos.

I gave up on ice cream a long time ago. Before I went vegan, dairy ice cream just made me hurt. I’ve tried a few brands of vegan ice cream, which ranged from just “meh” to pretty good, but the price tag always makes me want to retch, so I just haven’t been buying it. I decided to acquire a second hand ice cream maker (I suggest you do the same). This ice cream is cheap to make and seriously the best I’ve ever had. It mimics all the creaminess of dairy ice cream, without any of the sore tummy issues afterwards. I hope you enjoy it as much as I do. If you don’t have an ice cream maker, feel free to try this method (without the dairy, of course), though I can’t guarantee the exact same results.
